An Ode To Kale

Peeps, I have a confession to make. I am obsessed with kale. I don’t mean that I like kale and try to use it often. I mean I am disturbingly-might-possibly-need-help-in-freaking-LOVE with kale. I think it’s delicious, easy to cook with, good raw, great in a stirfry, lovely in smoothies (except for the green teeth, but we’ll overlook that) and amazingly healthy. So, when I was trying to come up with a new & speedy lunchtime recipe the other day, this ‘inspiration’ recipe from Maple Spice seemed like it could use a little … KALE!


1 packet organic soba noodles

1 massive handful (or two) sliced organic kale

M's favourite soy dressing (see below)


Cook the soba noodles according to the directions, rinse with cool water and set aside. Meanwhile, dry-fry the kale and by all means, feel free to eat some directly from the pan! Toss noodles and kale in a bowl (I use a big plastic one with a lid – you’ll see why in a minute). Now for the dressing. Exact quantities vary depending on how much you’re making, but you should aim to pour equal parts of the following ingredients into a small jar:


Sesame oil

Soy sauce

Agave


Add 1-2 cloves of pressed garlic, screw on the lid and shake. Pour onto the delicious kale and soba noodle concoction, add a sprinkle of sesame seeds, snap on the lid and shake again. Serve and eat. Quickly too… there are certain unnamed parties (I can’t say who due to a super-injunction) that may or may not try to keep stealing ‘just a bite’…

Green With Envy

So my first recipe isn't earth-shattering (or even rapture-worthy), but it's really healthy, tasty and easy to make, all of which make for a very happy Michelle. Yep, just referred to myself in the third person. And yes, I'm stupidly easy to please. So now, without further ado, here's my recipe for a spinach & banana green smoothie. It's chock full of antioxidant-potassium-irony goodness. And did I mention it's really easy to make?

1 big handful of spinach leaves
1 cup rice milk (you can probably use soy or almond, but I had rice milk)
1 1/2 bananas

Throw said ingredients into a blender, blend and pour. The hubby & I both agreed that it could be a bit thicker, so next time I'll add some ice. As soon as I get an ice-tray.

A Blog is Born


I’ve been reading vegan food blogs for a while now, drooling over the recipes, ‘wow-ing’ over the photos, and finding myself wondering how I could be a part of this somehow. And so, a blog is born. A blog that will hopefully help bring together some of the yummiest (oh yeah, I may make words up on occasion, please go with it) vegan recipes, whilst simultaneously helping this food-loving girl find her voice. 
So here’s the deal - if you are reading this, and you have a great vegan recipe that’s made mostly with whole foods that also happens to be fairly easy to put together (I’m not afraid to admit that I’m an amateur!), please submit them to me. Oh, and please take a few pretty pictures so I can post that with the recipe. That’s it. I’ll start by posting a recipe and hopefully, you’ll follow suit. Then I’ll go again, and you’ll go again, and so on and so forth. And if we all play nice, well… we just might have some lovely new recipes to add to our foodie repertoire.
